First Recipe - Spaghetti Bolognese

 


 

This is my version of Spaghetti Bolognese. It's a family favourite, kid approved and easy to make.

Serves 4

 Ingredients:

  • 500g beef and veal mince 
  • 1 packet spaghetti or pasta of choice
  • two tablespoons of oil
  • 1 onion, finely diced
  • two tablespoons butter
  • two celery stalks, finely diced
  • two carrots, finely diced
  • two cloves garlic, crushed
  • One tub of tomato paste
  • 1 can cherry tomatoes
  • 1 can of campbells tomato soup 
  • 1/4 cup red wine
  • two tablespoons Worcestershire sauce
  • two tsp Italian herbs
  • a pinch of sugar
  •  salt and pepper

Method:

  1.  Heat oil in a pan over high heat. Add onions and cook for three minutes, add butter and garlic and cook for another minute. When onion is soft and translucent add celery and carrot and cook for five minutes or until the vegetables have softened.
  2. Add meat and break up into smaller pieces while meat cooks in the pan. Once browned and no pink shows through meat add tomato paste, soup, and cherry tomatoes and stir to combine.
  3. Add wine, Worcestershire sauce, herbs, sugar, salt and pepper, stir to combine and bring meat sauce to the boil.
  4. Reduce heat to medium/low and simmer for twenty minutes.
  5. while meat sauce cooks, cook pasta according to packet directions. Serve with Parmesan cheese and crusty bread.
