Cinnamon Donut Bread and Butter Pudding
My first dessert recipe post. I've made bread and butter pudding before and for Easter dessert I use apple and cinnamon hot cross buns. I didn't like the Golden Bakery's Cinnamon Donut flavoured soft loaf on it's own (not enough cinnamon) so the rest of it is being used in bread and butter pudding.
Ingredients:
- 8 slices of Golden Bakery's Cinnamon Donut flavoured soft loaf
- 4 eggs
- 1 tsp vanilla extract
- 1/4 tsp cinnamon
- 2 cups milk
- 300 mls pure cream
- 40g butter, softened
- 1/2 cup sultanas
- 2 tablespoons sugar
- vanilla ice cream, to serve
Method:
- Preheat oven to 180 degrees celcius and grease a 5cm deep, 17cmx28cm baking dish.
- Whisk eggs, caster sugar, vanilla, cinnamon, milk and cream in a bowl.
- Spread both sides of bread with butter and cut slices in half diagonally.
- Arrange half the bread in baking dish and sprinkle with the sultanas. Repeat with remaining bread and sultanas.
- Pour egg mixture over bread and sprinkle with sugar.
- Bake for 30-35 minutes or until golden and set.
- Serve with vanilla ice cream.
