Leftover Fried Rice

 

This recipe uses any leftover BBQ meat (I promise it's not just microwaved takeout leftover from the night before), I've used pork chops cut off the bone and finely diced, plain BBQ sausages and even leftover Christmas roast chicken to make this before. It's a good way to use up leftover meat and quick and easy to make. This recipe serves 1-2 people.

Ingredients:

  • 1 microwavable rice cup 
  • 1/4 onion, finely diced
  • 1/4 red capsicum, finely diced
  • 2 cloves garlic, crushed
  • 2 eggs, lightly beaten
  • 1 tbsp soy sauce
  • 1 tbsp Japanese mirin seasoning
  • 2 spring onions, finely chopped
  • 1 rasher bacon, finely diced
  • leftover meat (for tonight's rice I used1/4 cup leftover roast lamb), finely diced
  • Salt and pepper
  • Fried crispy onions for garnish
  • Fried egg (optional)

Method:

  1.  Heat rice cup in microwave for 90 seconds according to pkt directions. In a small bowl add eggs, soy sauce and mirin. Beat well to combine.
  2. Heat oil in a pan over a medium high heat. Add spring onion and saute until soft and translucent, add onions and saute until soft and translucent. Add garlic and cook until fragrant, add capsicum and saute for two more minutes.
  3. Add bacon and leftover meat cook stirring for 4 minutes until light golden. Add cooked rice and stir through making sure to break up any lumps. Take the pan off the heat and add the egg mixture. Stir through rice until just set. Eggs are overcooked if they're scrambled. Season with salt and pepper.
  4. Top with crispy fried onions and or a fried egg and enjoy!
