Mum's Spaghetti Carbonara

 

Every now and again my mother makes me this spaghetti carbonara. I've learnt to make it for myself and it's super cheesy and super easy to make. This recipe serves 1-2 people.

Ingredients:

  • 1/2 pkt spaghetti or any pasta
  • 2 egg yolks, beaten
  • Olive oil
  • 1 tbsp cooking cream or full cream milk
  • 2 tbsp butter
  • 2 rashers bacon, diced
  • 2 cloves garlic, crushed
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup grated cheddar cheese
  • Salt and pepper
  • 1/4 cup reserved pasta water

Method:

  1. In a large pot of salted boiling water cook pasta according to pkt directions and  reserve 1/4 cup pasta water for later.
  2. In a small bowl whisk together egg yolks, cream or milk and salt and pepper, set aside.
  3. Heat oil in a pan over medium-high heat and add garlic. Saute for two minutes until garlic is fragrant. Add bacon and butter and cook for 4 minutes or until bacon is light golden.
  4. Working quickly stir through pasta, cheeses and pasta water until combined. Take pan off heat and stir through egg mixture until just set and combined. Season with salt and pepper and garnish with parsley and extra Parmesan cheese.
  5. Serve with crusty bread or garlic bread and enjoy!
