Pizza Night

 



You can use any toppings you like for your pizza. These are the ones we like. I made a meat lovers pizza using leftover bolognese sauce as the sauce base. The other two are pizzas my parents made with their preferred toppings.

Meat Lovers Pizza:

Ingredients:

  • Two table spoons left over bolognese sauce
  • Two table spoons crushed tomatoes
  • 1/4 cup cabana sausage
  • 1/4 cup shredded ham
  • mozzarella cheese
  • boccocini cheese
  • pizza topper herbs
  • 1/4 red onion, sliced
  • drizzle of baby rays BBQ sauce

Method:

  1. Top precooked pizza base with crushed tomatoes and bolognese sauce, sprinkle on Parmesan cheese and pizza topper herbs.
  2. Add ham, cabana sausage and red onions. Top with boccocini cheese, mozzarella cheese and BBQ sauce.
  3. Bake in 200 degree fan forced oven until cheese melts and is golden brown.

 This is a family recipe I felt like sharing. They're basically ham burger patties in onion gravy. My Nan used to make them all the time and I'll be sharing more family recipes. Ingredients: 1 small onion, finely diced 500g beef mince 1 tbsp parsley, finely chopped 1 piece of sourdough bread finely chopped 1/4 cup milk salt and pepper Italian herbs 1 cup flour 1 egg, beaten 2 tbsp Worcestershire sauce For Gravy: 1 small onion, finely sliced 1 1/2 tbsp gravox gravy powder 1.5 cups water Method: In a food processor blitz bread and add milk and leave aside to soak. Osso Buco with Cheesy Rice

 This is a recipe I make for family and we cook together. It's simple and hearty and good served with crusty bread and butter. I've been asked for this recipe especially the cheesy rice, so here it is.   Osso Buco: Ingredients: 4 osso buco steaks with bone and marrow 90g butter 2 carrots, finely diced 2 large onions, finely diced 3 celery sticks, finely diced 2 cloves garlic, crushed flour salt and pepper 2 tbsp olive oil 2 400g cans crushed tomatoes 1/2 cup dry red wine 400 mls beef stock 1 tsp basil 1 tsp thyme 1 strip lemon rind  Method: Preheat oven to 180 degrees Celsius heat oil in a large pan over medium heat. Add onions, carrot celery and garlic. Cook gently until onions are golden brown. Transfer vegetables to a casserole dish. Add extra oil and butter to the pan. Zhuccini Haloumi Fritters with Feta Yogurt Dipping Sauce

Ingredients: (Fritter batter) 200g zucchini, grated 80g haloumi, coarsely grated 2 spring onion, thinly sliced 2 tblsp chives, finely chopped (you can also use dill or chervil) 1 egg, lightly beaten 30g plain flour, sifted salt and pepper  Tip: Self raising flour can be used for a lighter batter. Ingredients: (Feta and Yogurt Sauce) 20g feta cheese 1 tblsp plain Greek yogurt 1 tblsp chives, finely chopped 2 tsp lemon zest 1/4 garlic, crushed (optional. I leave it out) salt and pepper to taste Method: (Sauce) 1. Puree or grate the feta cheese and add to a bowl, combine with other ingredients, and garlic (if using). (it should be quite thick). Method: (Fritters) 1. Coarsely grate the zucchini into a clean tea towel and squeeze out any excess liquid. 2. In a bowl combine zucchini with spring onion, chives, flour, egg,  and haloumi.
