Mum's Spaghetti Carbonara

  Every now and again my mother makes me this spaghetti carbonara. I've learnt to make it for myself and it's super cheesy and super easy to make. This recipe serves 1-2 people. Ingredients: 1/2 pkt spaghetti or any pasta 2 egg yolks, beaten Olive oil 1 tbsp cooking cream or full cream milk 2 tbsp butter 2 rashers bacon, diced 2 cloves garlic, crushed 1/2 cup grated Parmesan cheese 1/4 cup grated cheddar cheese Salt and pepper 1/4 cup reserved pasta water Method: In a large pot of salted boiling water cook pasta according to pkt directions and  reserve 1/4 cup pasta water for later. In a small bowl whisk together egg yolks, cream or milk and salt and pepper, set aside. Heat oil in a pan over medium-high heat and add garlic. Saute for two minutes until garlic is fragrant. Add bacon and butter and cook for 4 minutes or until bacon is light golden. Working quickly stir through pasta, cheeses and pasta water until combined. Leftover Fried Rice

  This recipe uses any leftover BBQ meat (I promise it's not just microwaved takeout leftover from the night before), I've used pork chops cut off the bone and finely diced, plain BBQ sausages and even leftover Christmas roast chicken to make this before. It's a good way to use up leftover meat and quick and easy to make. This recipe serves 1-2 people. Ingredients: 1 microwavable rice cup  1/4 onion, finely diced 1/4 red capsicum, finely diced 2 cloves garlic, crushed 2 eggs, lightly beaten 1 tbsp soy sauce 1 tbsp Japanese mirin seasoning 2 spring onions, finely chopped 1 rasher bacon, finely diced leftover meat (for tonight's rice I used1/4 cup leftover roast lamb), finely diced Salt and pepper Fried crispy onions for garnish Fried egg (optional) Method:  Heat rice cup in microwave for 90 seconds according to pkt directions. Grilled Chicken Sandwhiches with Air Fried Onion Rings

    Grilled chicken sandwiches are a favourite for lunch or dinner and onion rings come out of the air fryer tasting better than the deep fried ones in my opinion. This recipe serves 4. Ingredients: 4 skinless chicken breasts 8 slices of sourdough bread 1tbsp olive oil 1 avocado, cubed olive oil cooking spray 4 cos lettuce heart leaves 1 red capsicum, sliced 1 cucumber, sliced 1 large tomato, sliced salt and pepper mayonnaise 4 slices of cheese  BBQ sauce 1/4 cup panko breadcrumbs 2 eggs, beaten (use just the egg whites for a leaner option) 2tsp cayenne pepper 4 red onions, sliced thickly, rounds separated Method: Heat oil in a pan over medium high heat and cook chicken until browned on both sides and cooked all the way through. Roast Lamb and Vegetables

  A simple roast lamb with vegetables. Good for cold nights and leftovers can be used to make other meals the next day. I usually make lamb for Easter but it's just as good for Sunday roast. This recipe serves 4-6. Ingredients: 2kg leg of lamb, fat trimmed 1/4 cup olive oil 4 onions, quartered 1 tbsp chopped rosemary salt and pepper 1kg chat potatoes, quartered 6 cloves garlic, peeled and left whole 1 large sweet potato cut into chunks 1/2 pumpkin, peeled and cut into chunks Gravox gravy powder prepared according to pkt directions  Method: Preheat oven to 200 degrees celcius for a fan forced oven. Lightly grease a roasting pan, place lamb in the pan on a bed of onions. Add oil, salt, pepper and rosemary and rub over lamb. Roast for 15 minutes. Place potatoes in a metal steamer over a large saucepan of simmering water and cook for 5-7 minutes. Remove strainer and shake lightly to roughen up potatoes. Grilled Chicken Breast with Salad and Potatoes

  This grilled chicken breast can also be used for chicken parmigiana which I hope to feature here soon, in sandwiches and toasties and even for chicken Alfredo. For this I served it as is with a simple salad and boiled baby potatoes. Recipe serves 4. Ingredients: 4 skinless chicken breasts 1/4 cup plain flour salt and pepper 1tbsp olive oil 8 baby potatoes, boiled 1 cup baby spinach and or rocket leaves 1 avocado diced 1/2 cup fresh cherry tomatoes, cut in half 1/2 red capsicum, sliced (not pictured for this recipe we didn't have any) Yellow or green goddess dressing served on the side (you can make your own dressing if you like). Method:  In a large pot of boiling water cook baby potatoes for 12-15 minutes or until tender, drain and set aside. Combine flour, salt and pepper on a plate. Slow Cooked Lamb Stew

  I love slow cooker season, stews, casseroles and pasta are my favourite things to cook. This is a simple one pot slow cooked lamb stew perfect for cold winter nights. Ingredients: 2 table spoons oil 2 x 1kg boned rolled lamb shoulders, fat trimmed and cut into small bite sized pieces 1/4 cup plain flour salt and pepper 1 table spoon butter 3 shallots, finely diced (you can use onion instead) 4 cloves garlic, crushed 2 table spoons tomato paste 1 cup dry white whine 1 can crushed tomatoes 3 bay leaves 6 sprigs fresh lemon thyme  16 chat potatoes, halved 2 bunches baby dutch carrots, peeled and trimmed  300g green beans, ends trimmed Method: Coat chunks of lamb in flour, salt and pepper and shake off excess. In a pan over medium high heat cook lamb on both sides to brown in batches and transfer browned lamb to a slow cooker. Cinnamon Donut Bread and Butter Pudding

  My first dessert recipe post. I've made bread and butter pudding before and for Easter dessert  I use apple and cinnamon hot cross buns. I didn't like the Golden Bakery's Cinnamon Donut flavoured soft loaf on it's own (not enough cinnamon) so the rest of it is being used in bread and butter pudding. Ingredients: 8 slices of Golden Bakery's Cinnamon Donut flavoured soft loaf 4 eggs 1 tsp vanilla extract 1/4 tsp cinnamon 2 cups milk 300 mls pure cream 40g butter, softened 1/2 cup sultanas 2 tablespoons sugar vanilla ice cream, to serve Method:  Preheat oven to 180 degrees celcius and grease a 5cm deep, 17cmx28cm baking dish. Whisk eggs, caster sugar, vanilla, cinnamon, milk and cream in a bowl. Spread both sides of bread with butter and cut slices in half diagonally. Arrange half the bread in baking dish and sprinkle with the sultanas. Repeat with remaining bread and sultanas. Pour egg mixture over bread and sprinkle with sugar. Meat Filled Canneloni

  Fresh meat filled cannelloni on a cold winter night. This is a more involved recipe but the it's worth it in the end. For the meat filling, ingredients: 1 garlic clove, crushed 4 tablespoons vegetable oil 1 small onion, finely diced 40 g carrot, finely diced 200g pork and veal mince 500ml beef stock 1 tsp salt 1/4 tsp fresh ground pepper 2 tsp paprika 2 tsp tomato puree 200g spinach, coarsely chopped 150g mushrooms, finely diced 1 tablespoon finely chopped parsley 2 egg yolks 50g butter Method:  Heat oil in a pan and saute onion and garlic until soft and translucent, then add carrot and celery and saute for a few minutes more. Add mince to the vegetables and brown over high heat, stirring to break up any lumps. Season with salt, pepper and paprika. Stir in tomato puree, mushrooms and spinach and leave meat mixture aside to cool once spinach has wilted. Over a low heat, boil beef stock until reduced to 4-5 tablespoons. Fresh Pasta Dough

   Simple fresh pasta dough good for lasagna and cannelloni. I use a stand mixer for all my dough recipes and I don't knead by hand if I don't have to. Ingredients: 300g plain flour (preferably type 00) 2 eggs 4 egg yolks 1/2 tsp salt Method: Add flour and salt to the bowl of a stand mixer and make a well in the centre. Add eggs and egg yolks and beat on a low speed for ten minutes. Add a small amount of water if dough isn't coming together. Roll dough into a ball, cover with cling film and set aside to rest for 30 minutes to an hour.

Pizza Night

  You can use any toppings you like for your pizza. These are the ones we like. I made a meat lovers pizza using leftover bolognese sauce as the sauce base. The other two are pizzas my parents made with their preferred toppings. Meat Lovers Pizza: Ingredients: Two table spoons left over bolognese sauce Two table spoons crushed tomatoes 1/4 cup cabana sausage 1/4 cup shredded ham mozzarella cheese boccocini cheese pizza topper herbs 1/4 red onion, sliced drizzle of baby rays BBQ sauce Method: Top precooked pizza base with crushed tomatoes and bolognese sauce, sprinkle on Parmesan cheese and pizza topper herbs. Add ham, cabana sausage and red onions. Top with boccocini cheese, mozzarella cheese and BBQ sauce. Bake in 200 degree fan forced oven until cheese melts and is golden brown.

Pizza Dough

   I got the original recipe off taste.com, but I've re-written it for a stand mixer because I'm not kneading dough by hand for ten minutes if I don't have to. If you don't have a pizza oven like I don't you'll need to pre-cook the bases before adding any toppings. Ingredients: 1 1/2 cups warm water pinch of caster sugar 7g/1 sachet dried yeast 600g (4 cups) plain flour, plus extra for dusting (I use pizza flour) 1 tsp salt 60ml (1/4 cup) oil Method: Combine water, yeast and sugar in a small bowl. Set aside for 5 minutes or until foamy. To the bowl of a stand mixer add flour and salt, stir to combine and make a well in the center. Add yeast mixture and oil. Use a round-bladed knife in a cutting motion to mix until mixture is roughly combined. Use a dough hook for the stand mixer and beat on low for ten minutes until mixture is forms a ball of dough.
